Wednesday Kitchen - Hold the Mayo!

In this edition of Wednesday Kitchen, JET Team member Ida of AdroitJewelers has been experimenting with an alternative to mayonnaise....

Macaroni salad is a staple at summer picnics everywhere. But what’s with the “no mayo” you ask? Well, I’ve been trying to think of a way to make one without using all of the mayonnaise (and still have it taste good, of course.)

I started searching for ideas, and came up with something I decided to try. Can you guess what the 2 mystery ingredients are?

They are plain Greek yogurt, and hummus! Some of you are probably thinking “yuck”, and some of you are thinking “hmmm, that doesn’t sound like a bad idea”. Well, it’s not a bad idea - at least I don’t think so!

In all honesty, I was prepared not to like it, but I did like it, and now I’m kind of eager to have people over and serve it to see what kind of reaction I get. Do you think it’s okay to let them try it BEFORE I tell them what’s in it?!

Does anyone have any other substitutions they've tried themselves for the mayonnaise, or any ideas for alternatives? Please share your suggestions in the comments!

That sounds really good! I wouldn't tell people until they try it. I make ranch dip with blenderized cottage cheese and one of those ranch dry packets. That might work for mac salad too.

Avocado for the dairy/phobic!

It sounds delicious to me. I'm not a huge fan of pasta salads, but I think I'd try this one.

Well, I love hummus and I love greek yogurt - I'll have to give this a shot!

I like the sound of either one. I wouldn't tell anyone until after they have tasted it.

Wondering if you could use Aioli too.

Mmm, that salad looks good! I like greek yogurt and hummus too, so I think I would probably enjoy your recipe.. so did you mix the hummus and yogurt together? How about a recipe with amounts added for your new faux mayo?

Sounds good to me! Thanks for the tip Ida. I'll be giving that combo of hummus and yogurt a try. How about in a yummy chicken salad in a pita pocket one of these hot summer evenings?

I only like mayo (Best Foods) on certain things. Since I've been working on wellness I use equal amounts of Greek yogurt and mayo in tartar sauce, chipotle mayo and tuna salad. Used to be that Craig would say no to yogurt on an omelette or taco for instance, but either I've worn him down or he's enjoying it nowadays. One of my biggest challenges is getting more protein into each meal; greek yogurt helps with that.
